You're right Magnolia can be a little intimidating at first. But its worth it! 
And just so you know we are actively working on easing the learning curve.

For your question - I highly recommend you to go through the Magnolia Academy.

No - I would not use the demo site as a starting point - but just as an example 
of how a Magnolia site can be put together.
Use whatever pieces of the STK make sense for your project - but dont be afraid 
to build your own page templates and component templates - its a really slick 
system once you get the hang of it.
