Yes, people do this. Concretely and in the basic cases, they would
use the same authoring interface, but each site and its set of
authors would have specific ACLs, which would give them access to
different sections of the repositories or to different repositories
altogether if you're to setup more than the default ones :)
I seem to remember there are a couple of pages describing options for
such scenarios on the wiki (http://wiki.magnolia.info); they were
probably written against 3.0.x but should be generally still valid.
(but 3.5 might provide more or better options ;))
