make defconfig ARCH=um is one (Jeff Dike's one); but that's extensible - in 
-bb if you do make release_defconfig ARCH=um you get 
arch/um/configs/release_defconfig, and there's also 
arch/um/configs/release64_defconfig; it suffices creating 
arch/um/configs/XXX_defconfig to have another (and that's in vanilla too, -bb 
only adds arch/um/configs/release_defconfig).
