After digging a bit into the code, I've finally got this all figured out.
When creating the project, I needed to add...
p.addReference("ant.projectHelper", ph);
To call a target with all the dependencies
p.executeTarget(targetName);
Thx again for all your help
I hope to be able to make this project publicly available sometime soon.
