Steven, using any of the existing HOW-TOs definitely makes a good starting point. Any of the existing XML HOW-TOs available in
http://cvs.castor.codehaus.org/viewrep/castor/castor/src/xml-howto/ can be used and modified according to what is required. And as far as I know, none of the features you are using is version-specific (talking about more recent releases only, though). Thanks for your effort in advance ...
