For almost all Unix software, you'd download the source, extract it, and run ./configure --prefix=/home/yourusername/softwarename. So for Erlang/CouchDB, ./configure --prefix=/home/you/couchdb.
But I don't know if CouchDB and Erlang are standard autoconf tools.
