I don't know about RHEL 6.2, but installing on Windows is straightforward:
just use the installer at http://couchdb.apache.org/#download and it will
set up a Windows service for you. It should run fine on any fairly recent
version of Windows, including Server 2012 R2. The Windows release of
CouchDB does not get quite the same love and attention that the Unix one
does, but I have several installations that have run unattended for months
or years with no problems.
