Also, you say no error reported in Catalina, but it would still be nice to see those log entries - if the Apache logs don't give some reason for the 500 Internal Server Error, then the Tomcat logs should. Also, check the system logs - /var/log/messages, journalctl, etc., on the Guacamole host. Sometimes distributions will redirect Tomcat logs to syslog as part of their out-of-the-box configuration. Finally, check the system logs for messages from guacd and see if it is reporting any errors.
