As Nick suggests, please verify that you are not accidentally configuring the connection to attempt to connect to the VNC server as if it is guacd. The fields in the web interface for the guacd hostname/port and the VNC server hostname/port are fairly close together, so this would be an easy mistake to make. If you did accidentally specify the VNC server hostname/port for the guacd hostname/port, the protocol error you see in catalina.out is exactly what would be expected.
