I can't really help you, but I've had a couple of issues with audio too. I can only say that in my case audio works fine both ways if I use the same OS on both ends, ie. Windows 10 client to Windows 10 server. A Windows 10 to Widnows 7 for instance does not fully work for me. Linux client to Windows 10 or 7 also fails. Other than these observations I can' be of any help. You could try to record your voice within the server (Accessories) instead of using Skype or whatever. Keep it simple to make your first tests.
