There's nothing I see in your log that stands out (except that it isn't
establishing the printer connection).
Unfortunately I've never had this issue myself and don't seem to be able
to replicate it. However I wonder if you have printer redirection turned
off in the Windows machine, or possibly a AV/firewall that's preventing it?
If I were troubleshooting this I'd temporarily disable all firewall and
AV on the target machine, connect to it via Guacamole and see if that
sorted the issue. If so work back from there.
If that didn't work I'd spin up a VM and install Guacamole (using the
instructions I posted for the 1.1 release - but include ghostscript) and
see if that worked. If so then it focuses the issue to your present
Guacamole install, if not then it would further suggest a Windows problem.
FYI here's a log that shows a successful connection with printer
enabled, and a print. As you'll see it should be immediately apparent
whether the printer will be set up, or not:
