There is no server-side configuration necessary. The administrator needs to
enable sharing on a per-connection basis with sharing profiles, but that is
what you have already done and is what is documented in the chapter you
refer to. The documentation covering how a non-administrative user with
access to a sharing profile can share their connection is here:

The overall process for someone that wants to share their current
connection is:

1) Press Ctrl+Alt+Shift to open the Guacamole menu
2) Click "Share"
3) Choose the desired option (there will be one option for each sharing
profile)
4) Copy the link that appears in the menu

The link will be valid only for as long as the user remains connected. If
the user disconnects, all users sharing that connection will be
disconnected.
