This is due to an incompatibility between the MySQL/MariaDB JDBC driver
("Connector/J") bundled with the "guacamole/guacamole" image and the
latest version of MariaDB. See:
https://issues.apache.org/jira/browse/GUACAMOLE-1808
It seems the Docker's official MariaDB image was recently updated from
10 to 11, hence the error appearing now. I'd recommend taking a database
backup and (carefully) rolling back to MariaDB 10.x.
