Is there anything I can try to do to make PDFs print?  It does look like its 
converting the small Mb PDFs into very large Mb files to print and just locks 
up and never prints.

No, but it is trying to convert PostScript to PDF.

If you are attempting to view and print a PDF from within the remote desktop, 
then the application you're using to view the PDF will talk with Windows 
drivers to produce a PostScript document that is sent over the network, which 
guacd ultimately receives and tries to convert to PDF for you using a local 
copy of GhostScript.

At least Adobe Acrobat is known to produce absolutely huge PostScript documents 
when printing a PDF, and this causes trouble for GhostScript.
A workaround would be to download the PDF through file transfer instead of 
printing the PDF.
