The issue you've described has been reported in JIRA, but it's currently unclear whether it is a bug in Guacamole, in FreeRDP, or the result of assumptions made by Windows with respect to RemoteApp and display size:
https://issues.apache.org/jira/browse/GUACAMOLE-125 I am personally leaning toward the issue lying outside Guacamole, as the symptoms themselves indicate that the Guacamole portion of things is correctly handling display size, updates, etc., but this needs to be determined experimentally. There's some discussion on the above issue regarding how to do this, so if you'd like to assist with narrowing things down, please read through the above issue and give it a shot.
