So I found the solution for the gridH2IndexingSpi.setDefaultEscapeAll(true) at least. This option has move to the CacheConfiguration object.
Not yet found the option for gridH2IndexingSpi.setDefaultIndexPrimitiveKey(true) but work in progress...
