I figured the issue. I just had to remove the incorrect entries in the 'URL Patterns to include' section.

I see the HTTPS requests & responses in the Listener under Workbench -> HTTPS Test Script Recorder. However, I don't see the requests under Test Plan -> Recording Controller.
