Check this article https://releasematic.wordpress.com/2014/06/23/debugging-jmeter-with-wireshark/. It's about sniffing traffic with Wireshark and comparing with Meld. I wrote it while faced the same problem.

Thanks, Erez. It turns out that I was successful (with help from the group!)
in doing everything I wanted. Now, I just have to get the application
developer to help me troubleshoot why my script failed to do what it's
supposed to. My guess is, there is a session ID or some other variable
somewhere that I am not seeing.

Not from the web server app side. If I succeed, I can see it in the
logs. If I fail, nada.

I can see my script POSTing using the "View Results Tree"

I cannot get the regex to get the data, though. I am still working on
that.
Do I need to put the regex extractor inside the steps of the script?
Or do I leave it at the thread level?

When it is outside of the recording controller, I always get the
default value for the string "NOT_FOUND"

When I put it into the controller, I get the actual string
${enrollment_id}
