However, I understood that the user wanted a "pure" persistence.xml, but
if he can use the cfg properties file, clearly it's a better option.

It registers with config admin. So you can create a config file
etc/org.apache.aries.jpa.<persistence-unit-name>.cfg.
Inside you set the properties you want to override.
