Anyway, when I set KARAF_LOG it worked, in that data/log/karaf.log was created, but when I did a test and stopped karaf, deleted the data director, and restarted karaf, then karaf failed to start because KARAF_LOG pointed to a non-existing directory. When I manually created the log directory, using mkdir -p data/log and then did bin/karaf then karaf started and created a data/log/karaf.log file.
