In most cases you can change the location of your Java
installation by setting the JAVA_HOME environment variable.
AFAIK, m2eclipse ignores JAVA_HOME. Make sure you're running Eclipse
with a JDK instead of a JRE. You can use the -vm commandline option to
Eclipse or add it to eclipse.ini
