pack200 is a special format developed for distribution only and jars compressed by that format can't be directly consumed by JVM, so they need to be uncompressed first. As far as I know, maven-jar-plugin [1] does not provide support for pack200. You will have to ask for that in the Maven Users list or open an enhancement request for maven-jar-plugin (Maven 2.x Jar Plugin) at http://jira.codehaus.org/secure/CreateIssue.jspa?pid=11137&issuetype=2

As a workaround you can use Maven Ant runner plugin to launch pack200 using Ant tasks. You try to Google for that or again, ask in the Maven Users list.

By the way, this this question is not specific to m2eclipse and you would have better responses on generic Maven questions in the Maven Users mailing list.
