Create a Run Configuration as Todd explained. Then, to use it, click on the
little black down arrow next to the Run icon at the top (the green circle with
the white triangle in it). That will give you a pop up menu of your Run
Configurations.

If you're asking how you can have them show up in the fly out menu you get from
right clicking on the project and selecting Run As, I'd like to know as well.

There is an action called "Run as... / Maven build" and when you select it
for the first time it it will open Maven launch configuration dialog where
you can specify any goals you want to invoke. Next time it will just invoke
that Maven configuration without asking additional question. The same action
can be invoked using Alt-Shift-X, M shortcut (it can be remapped in keyboard
preferences).

I tried that - but for each project it still popped up a new dialogue
box forcing me to type in "clean install" manually - hence my question
on how I can modify the defaults listed in the menu.

You're right in that the second time for the *same project* it does
seem to remember it.. so at least it helps me a tiny bit. Thanks!
