I suggest that you read the solr connector end-user documentation. You can configure the connector to use either update/extract or just update. But the problem with using just update is that all documents have to be read into memory (that's a SolrJ issue that we'd like fixed but so far no luck). Also, when using /update, you will probably want to put the tika extractor transformer into your pipeline.
It may be easier and safer to just add Solr Cell support to your solr instance. Up to you.
