Check you r apache error log. I bet $1.000.000.000 that you will find segfault in it regarding saving data. I've faced it few times with no solution. Once I've eliminated segfault by recompiling all (apache, php, mysql and all companion stuff) from sources. What is your environment? OS, apache, php etc..?
