Hi, OK, so I found the exact difference between the machines (finally!).
On the server where JBoss refuses to start, there is no JAVA_HOME set. What bothers me here, is that in the console I am running Maven in, JAVA_HOME is actually set (either because I did it manually or because Jenkins sets it). For some reason when I try to start JBoss with the plugin, the JAVA_HOME is not seen. Starting JBoss directly myself though, everything works... I think I'll play around with the plugin a bit to see if I can find a solution for this.
