Hello Alexandre! Nutch is happy to index to 6.1 as long a client libraries and API's are properly implemented. If, by default, Nutch doesn't work well with 6.x, it should. There have been cases where indexing to the cloud didn't work, but as a back up, Solr still allows indexing to a single node, which still works well.
We may have been a little late with updating our schema to the latest version, but that should not cause issues at all.
