The architecture of OFBiz will help you here. Just review the controller.xml and screen definitions files and you'll have all of the information you need in a format far more concise and to the point than any document could be.

But nevertheless, is there any document which I might have overlooked which is explaining the sample shop that comes with OFBiz and how the .ftl files are nested? Or would I be on my own finding this out by using the source?
