Thanks, I did check it out and I think it could work.  However, I am a little 
bit lost with all the fields that are available to me.

Is there any additional documentation/guidance that anyone can provide for the 
workeffort application?

Yes, this does exist. It is in the WorkEffort Manager application.  
There is a section for time sheets, part of the "my" page for "My  
Timesheets", and even stuff to invoice time entries related to a  
WorkEffort or tree of the same.
