Dear Grant, The financial management in ofbiz is work in progress you would not get a complete documentation on it.
If you are looking for something already done then its better u look at ofbiz based product like http://www.opentaps.org or http://www.neogia.org/ Both have some financial management system although not sophisticated but ok for general accounting.
