I recommend you read through the two volumes of The Data Model Resource Book, Revised Edition. For more info see:

There is some additional information in the comments of the data model itself (description elements actually). Beyond that you can search through the code to see how things are used. Of course, if your questions are about which entity to use for a particular purpose, only a human can really answer that sort of thing, and only safely/ accurately/usefully if it is done after sufficient analysis and design.
