There is documentation on OFBiz using OFBiz's own content management system.
On the demo site, see
https://demo-trunk.ofbiz.apache.org/cmssite/cms/APACHE_OFBIZ_HTML . Or, if
you have already installed OFBiz on your own computer with the demo data,
the same .../cmssite/cms/APACHE_OFBIZ_HTML URl will work locally.
Preferably locally, because else it uses much resources on Apache OFBiz
official demo VM
