No Pierre, you are not mistaken, only separate DB by tenant is implemented in 
OFBiz

Unfortunately, these variants are not implemented in current feature set of
OFBiz, but I might be mistaken.

Re 2. As these variants are not implemented (again, I might be mistaken)
you won't find any implementation guideline or documentation at the OFBiz
site. But googling might help you find what you need.
