Dear, Term "Delete"! I would say 'unassociate'.
First thing as per design, product could not directly associate with Catalog. Catalog is associated to category and category is associated with products. It is the way how a product is associated with catalog. Therefore you could not find any direct link(or service) at catalog screen to unassociate product from catalog.
