Order Entry: Anonymous Orders?

Hi,
 
I'm looking at the sample data, and it appears that the app is designed to 
enter a customer name before an order. However, in a retail store at the cash 
register, many people use cash and do not want to create accounts. What would 
be the correct way to handle anonymous in-person cash transactions? Do you 
create a customer named "cash"?
