Shivangi, Edit/Update Order is common process with condition that order should be in editable status. Editable statuses can be created or approved or hold. But order in cancel or completed status will not allow to edit.
Also we should consider status changes as part of document (probably Update Order). +1 for documenting the Update Order process flow.
