Hello james, I don't think there is direct support available to create configurable options without associating product to it. The data model allows it but at the code level, when you order the configurable product by selecting certain options, it will look for the associated product in the system.
In your email, species of a door, jam size, left or right entry, looks like they are the feature of the door. Can you let us know other configuration options for your product?
