1) you only can hide some fields (using CSS), or modify the code
2) The rights are complex :)
   * if room is not moderated first person entered is room Admin :)
   * If user has "Admin" right he/she is room Admin
   * if room is connected with organisation and user is orgAdmin he/she is
room Admin
   * if user is assigned to be moderator of the room he/she is room Admin

I guess thats it :)
