To build POI from source, you'll want "ant jar", as the help text you got explained
If you're not planning to make any changes to POI, then simply download the binary package, and add the appropriate jars to your own build. See the components page - http://poi.apache.org/overview.html#components - for a list of what jars you need based on what bits of POI you want to use
