If you are the system administrator you can change your /WEB-INF/classes/ApplicationResources.properties.
If you are an user you can change your site template on Preferences -> Templates, the document 'roller-template-help.pdf' is of great help for this. In order to get rid of the calendar tag you just have to play with the #showWeblogEntryCalendar macro on the Weblog template. Hope this helps.
