I think this functionality exists already.  If you add a summary to your
blog entry, the summary will be displayed on the main page with a "read
more" link to the full post.  If you don't use summaries, you could
alter your theme to something like this (in your _day.vm template):

#if($entry.displayContent.length() > 500>
  $entry.displayContent.substring(0,500) [Read More...]
#else
  $entry.displayContent
#end

Although, if you use markup in your posts this might have some weird
side-effects.  In that case you might want to override
getDisplayContent().

Yes.  In your theme, edit _day.vm

Replace

<p class="entryTitle">$entry.title</p> 

with

<p class="entryTitle">
  <a href="$url.entry($entry.anchor)">$entry.title</a>
