My roller-ds.xml file was pointed to another DB server .... oops!

I do have another question, however: I want to disable all email functionality 
in Roller (for now). Could I do this by setting 
mail.configurationType=properties and not specifying any mail host?

Roller only stores that information in the database, so there must be
something else going wrong. You sure you deleted that database?
