I've tried the following line and unfortunately it doesn't work.
bind(Cookie.class).toInstance(new SimpleCookie("myCookie");
Regarding the global session time out, if we take for reference the INI
file, it appears to be set on SessionManager class :
securityManager.sessionManager.globalSessionTimeout = 36000000
