Setting up an S2 project is pretty easy; as long as your libraries are imported into the project and on the project classpath there aren't many other issues; there's a bit more legwork if you're not using MyEclipse or the web tools stuff. The bootstrap tutorial on the S2 wiki [1] is a non-Eclipse intro; check out the Eclipse website for Eclipse tutorials, and if you're using MyEclipse there are a ton of docs and screencasts on their site too. d.
