Hi Steve, I don't know of any specific instructions for how to do this.
Seems like a good candidate for the https://wiki.apache.org/tika/TikaParserNotes page on the wiki. If you're talking about using Tika as a library, then you'd typically edit the pom.xml (or equivalent) to exclude the bouncy castle dependencies.
