The only textbook I'm aware of is Graham Wilcock's "Introduction to Linguistic Annotation and Text Analytics", which has an introduction to UIMA. Also check out the tutorial style docs on the UIMA website: http://uima.apache.org/documentation.html#getting_started You may wish to start there.
