Aaron, I think "/etc/sysconfig/network-scripts/ifcfg-eth1" is the network configuration for the Centos/Fedora/Redhat series. The network configuration for Ubuntu is probably "/etc/network/interfaces".
As Dmitri said, you might used the linux OSid for the Ubuntu base image.
