I'm afraid, we don't have built-in support to do this, we collect the statistics using an Axis2 handler which sits in the middle of the message flows. At [1], you can find the source code for that Axis2 module. You could modify that component itself, to log the data into a MySQL database, or use that as a reference to create your own Axis2 handlers to do the job. Also, see [2] for generic information on writing handlers.
