It all depends on what you want to edit. Instructions on changing the core model classes can be found here: http://www.appfuse.org/display/APF/AppFuse+Core+Classes. For the rest it is probably better to extend/replace - this should make it easier to upgrade to new versions as they become available. Hope that helps!
