I could be wrong, but my understanding is HSQL and Derby are made more for convenience [very portable and they can be packaged with an app] than they are for enterprise production use. I would suggest one of the other two and I'd probably lean toward MySQL because I've never had much of a problem with it and PostgreSQL is just harder to set up for some reason.
